California Roll Salad
Ingredients
- Salad Dressing Ingredients:
- 1/4 Cup White Wine Vinegar
- 2 TBS Vegetable Oil
- 2 TBS Sugar
- 2 TSP Asian Sesame Oil
- 1 TSP Soy Sauce
- 1 TSP Grated Ginger
- 1/2 TSP Salt
- 1 Garlic Clove Crushed in Press
- Salad Ingredients:
- 2 Cups Cooked Rice (White or Brown) Room Temperature
- 1 Cucumber Peeled, and Sliced into Half Rounds
- 1 Avocado, Pitted, Peeled and Sliced
- 1 Cup Surimi (imitation Crab Meat) Shredded
- 2 TSP Sesame Seeds, Lightly Toasted in a Dry Pan
Method
If you like California Rolls (Minus the Seaweed) you will love this salad! I have made this recipe for years and it turns out perfectly every time. Can easily be used as a side salad or a main entrée.
Make Dressing: Whisk together vinegar, vegetable oil, sugar, sesame oil, soy sauce, ginger, salt, and garlic in small bowl until well blended.
In separate bowls toss 2 TBS of Dressing with Cucumbers, and Surimi. Toss 1/4 Cup of Dressing with Rice.
To serve pile Rice in bowl, top with Avocado, Surimi, and Cucumber Mixtures. Sprinkle Sesame Seeds on top.
