Ingredients
  • Salad Dressing Ingredients:
  • 1/4 Cup White Wine Vinegar
  • 2 TBS Vegetable Oil
  • 2 TBS Sugar
  • 2 TSP Asian Sesame Oil
  • 1 TSP Soy Sauce
  • 1 TSP Grated Ginger
  • 1/2 TSP Salt
  • 1 Garlic Clove Crushed in Press
  • Salad Ingredients:
  • 2 Cups Cooked Rice (White or Brown) Room Temperature
  • 1 Cucumber Peeled, and Sliced into Half Rounds
  • 1 Avocado, Pitted, Peeled and Sliced
  • 1 Cup Surimi (imitation Crab Meat) Shredded
  • 2 TSP Sesame Seeds, Lightly Toasted in a Dry Pan
Method

If you like California Rolls (Minus the Seaweed) you will love this salad! I have made this recipe for years and it turns out perfectly every time. Can easily be used as a side salad or a main entrée.

 

Make Dressing: Whisk together vinegar, vegetable oil, sugar, sesame oil, soy sauce, ginger, salt, and garlic in small bowl until well blended.

In separate bowls toss 2 TBS of Dressing with Cucumbers, and Surimi. Toss 1/4 Cup of Dressing with Rice.

To serve pile Rice in bowl, top with Avocado, Surimi, and Cucumber Mixtures. Sprinkle Sesame Seeds on top.
